Ingredients
  

  • 2 Matjes herring fillets mild, young pickled herring
  • 2 crusty bread rolls Kaiser rolls, sourdough, or whole-grain
  • ½ small red onion thinly sliced
  • 2-3 dill pickle slices cut lengthwise
  • 1 tablespoon butter or sour cream
  • Fresh dill optional, for garnish

Instructions
 

  • Prepare the Herring: Drain the Matjes herring fillets and pat them dry with a paper towel. If desired, rinse briefly in cold water to reduce saltiness, then pat dry.
  • Slice the Bread Rolls: Cut the crusty rolls in half horizontally. Toast them lightly if you prefer extra crunch.
  • Spread Butter or Sour Cream: Spread a thin layer of butter or sour cream on the bottom half of each roll.
  • Assemble the Sandwich:
  • Place one Matjes herring fillet on each roll.
  • Add thinly sliced red onions on top of the herring.
  • Layer 2-3 pickle slices for a crunchy, tangy contrast.
  • Garnish & Serve: Optionally, sprinkle with fresh dill for added flavor. Close the sandwich and serve immediately.
