Traditional Chopt Soup Recipe

Equipment

Ingredients
  

  • 1 large onion chopped
  • 2 tomatoes diced
  • 1 bell pepper diced
  • 1 habanero pepper finely chopped (adjust for heat)
  • 2 cups leafy greens spinach, kale, or collard greens, chopped
  • 1 cup carrots diced (optional)
  • Meat Options Choose One or Mix:
  • 1 lb beef goat meat, or chicken, cut into small pieces
  • ½ lb smoked fish optional
  • Seasonings & Spices:
  • 1 teaspoon salt or to taste
  • ½ teaspoon black pepper
  • 1 tablespoon ground crayfish optional, for umami flavor
  • ½ teaspoon Cameroon pepper or cayenne
  • 1 teaspoon uziza seeds optional
  • ¼ cup palm oil or vegetable oil
  • Broth & Extras:
  • 4 cups water or stock chicken, beef, or vegetable
  • 1 teaspoon fresh parsley or cilantro for garnish (optional)

Instructions
 

  • Step 1: Prepare Ingredients
  • Wash and chop all vegetables.
  • Cut the meat into small, even pieces. If using fish, debone and flake it.
  • Season the meat with salt and black pepper.
  • Step 2: Cook the Meat
  • In a large pot, heat 2 tablespoons of palm oil over medium heat.
  • Add the meat and brown it on all sides for 5 minutes. Remove and set aside.
  • Step 3: Sauté Vegetables
  • In the same pot, add onions, tomatoes, and bell peppers. Sauté for 3-5 minutes until softened.
  • Stir in the crayfish, Cameroon pepper, and uziza seeds. Cook for another 2 minutes.
  • Step 4: Simmer the Soup
  • Pour in 4 cups of water or broth. Bring to a boil.
  • Return the browned meat to the pot and reduce heat to low-medium. Simmer for 30 minutes.
  • Step 5: Add Greens & Final Touches
  • Add chopped leafy greens and let them cook for 3-5 minutes to retain their nutrients and color.
  • Taste and adjust seasoning if needed.
  • Garnish with fresh parsley or cilantro before serving.
  • Step 6: Serve & Enjoy
  • Serve hot with rice, yam, fufu, or bread.

Notes

For a vegetarian version, swap the meat for chickpeas, black beans, or lentils.
For a spicy kick, add extra habanero or chili powder.
Storage Tip: Refrigerate in an airtight container for up to 4 days, or freeze for up to 3 months.
