  • 1 tsp Old Bay seasoning
  • ½ tsp garlic powder
  • ½ tsp onion powder

  • 8 oz Lion’s Mane mushrooms diced
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 3 cups vegetable broth
  • 1 cup coconut milk or heavy cream
  • 1 tbsp olive oil
  • ½ tsp thyme
  • ½ tsp salt
  • ½ tsp black pepper

Instructions
 

  • Pan-Seared Lion’s Mane Mushrooms:
  • Heat olive oil or butter in a large skillet over medium heat.
  • Add Lion’s Mane mushrooms and cook for 5-7 minutes on each side, allowing them to develop a golden-brown crust.
  • Stir in garlic, salt, pepper, and paprika. Sauté for another 2 minutes.
  • Remove from heat, sprinkle with fresh herbs, and squeeze a little lemon juice over the top before serving.
  • Lion’s Mane "Crab" Cakes:
  • Shred Lion’s Mane mushrooms into strands.
  • In a bowl, mix mushrooms with breadcrumbs, egg, mustard, mayo, Old Bay seasoning, garlic powder, onion powder, lemon juice, and parsley.
  • Shape into patties and let them chill in the refrigerator for 15 minutes to firm up.
  • Heat olive oil in a skillet over medium heat and cook patties for 3-4 minutes per side, until crispy and golden brown.
