Equipment

  • Large skillet (cast iron or non-stick)
  • Tongs or slotted spoon
  • Two shallow bowls (for batter and coating)
  • Paper towels (for draining excess oil)
  • Knife and cutting board

Ingredients

  • For the Squash:
  • 2 medium yellow squash or zucchini sliced into ¼-inch rounds
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • For the Batter:
  • ½ cup milk or buttermilk for extra flavor
  • 1 large egg
  • For the Coating:
  • ½ cup all-purpose flour
  • ½ cup cornmeal
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika optional, for extra flavor
  • For Frying:
  • 1 cup vegetable oil or peanut/canola oil for frying

Instructions

  • Prepare the Squash: Wash and pat dry the squash. Slice into ¼-inch rounds for even frying. Sprinkle with salt and pepper and let sit for 5 minutes.
  • Prepare the Batter: In a shallow bowl, whisk together the milk and egg until well combined.
  • Prepare the Coating: In another shallow dish, mix the flour, cornmeal, garlic powder, and paprika.
  • Coat the Squash: Dip each squash slice into the milk mixture, then dredge in the flour-cornmeal mixture. Press lightly to ensure an even coating.
  • Heat the Oil: In a deep skillet, heat the oil over medium-high heat until it reaches 350-375°F. Test with a small drop of batter—if it sizzles, the oil is ready.
  • Fry the Squash: Fry in small batches, about 2-3 minutes per side, until golden brown and crispy. Avoid overcrowding the pan.
  • Drain & Serve: Remove with a slotted spoon and place on a paper towel-lined plate to drain excess oil. Serve hot with your favorite dipping sauce!

Notes

Best Oil for Frying: Use peanut, canola, or vegetable oil for the best crispy texture.
Healthier Alternative: Air fry at 375°F for 10 minutes, flipping halfway through.
Serving Suggestions: Pairs well with barbecue, fried chicken, or a fresh garden salad.
Dipping Sauces: Try ranch, honey mustard, spicy aioli, or Greek yogurt dip for extra flavor.
